Vegan Chocolate Strawberry Coconut Butter Cups


  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup fresh strawberries, sliced
  • 1 tablespoon honey
  • 1 tablespoon coconut flour
  • 2 cups semi-sweet chocolate chips, we use Enjoy Life Chocolate Chips
  • 2 tablespoons coconut oil


  1. In a food processor, blend the shredded coconut on high, stopping as needed to scrape down the sides. 
  2. Add the strawberries and honey, blend until smooth.
  3.  Add the coconut flour and pulse just until blended. Set aside.
  4. Line a muffin tin with paper liners and set aside. 
  5. Gently melt the chocolate chips and the coconut oil together until smooth. 
  6. Add about 1 teaspoon of the melted chocolate to the bottom of the paper cups, make sure the chocolate is spread evenly on the bottom. 
  7. Place in the freezer for 10 minutes.
  8. Remove the chocolate from the freezer. 
  9. Place about 1/2 tablespoon of the strawberry filling on top of the chocolate, use your fingers to spread the mixture evenly over the chocolate as needed. 
  10. Cover with about 2 teaspoons of melted chocolate, or enough to cover the strawberry filling.
  11. Return the chocolate cups to the freezer until set, about 10 to 15 minutes. 
  12. Remove from the freezer! Store, refrigerated, in an air tight container.
  13. Enjoy!
